Memory and fire: the story of three Seville chefs who came home

Three Seville chefs return home after years in leading kitchens. NODO is born: contemporary cooking centred on produce and fire in Santa Cruz. Opening soon.

Seasonal cuisine
Behind NODO are three chefs from Seville who left to train in leading kitchens and, one day, decided to return. They came home to rebuild what they had learned elsewhere and give their city back a little of the spirit they had carried around the world. That is how a contemporary cuisine true to its origins was born, in the heart of Santa Cruz.

Leaving: years of learning far from home

Each followed a different path through demanding kitchens, learning discipline, technique and what they did not want to do. Yet cooking with a personal voice in other cities eventually weighed as heavily as it taught. Something was missing: familiar flavours, the warmth of home.

Returning: how NODO’s contemporary cuisine began

And so the embers were lit. Returning to Seville meant returning to its produce, its markets and childhood flavours. To the inner fire that gave birth to NODO’s ingredient-led cuisine: proud of its origins, looking ahead without letting go of its roots. Technique serves memory, never the other way around.

Andalusian produce and fire: what we cook at NODO

Behind every dish is a distinctive larder: seasonal Andalusian produce, from vegetables and fish to game. One element brings it all together: fire. Cooking over embers is the language these Seville chefs use to handle ingredients that already have plenty to say. A living, seasonal cuisine that changes with what the land and sea provide.

Memory and fire: what it means

The name is no coincidence. Memory is the return, the origins and the flavours all three recognise without explanation. Fire is the warmth of home, the energy and the tastes we remember from childhood, now at the heart of the kitchen. Two words that sum up an idea: where you come from and how you cook it.

Contemporary, ingredient-led cooking in the heart of Seville

Opening a contemporary restaurant in Santa Cruz is a statement: bringing honest cooking into the city’s most visited heart. For those who want to stay, not simply pass through. Memory and fire, in the place where Seville sees itself through familiar eyes and those of people discovering it for the first time.
